Last but not least, it was dessert time. All the golden plates including the napkin ring were replaced by Pieter Stockhmans’ blue china, representing the blue of the Mediterranean Sea.

Le Louis XV with a crispy praline |
Ice of Milk, caramel crunch with crystallized ewe |
Again, we ordered two different desserts. The Ice of Milk came with fragile layers of caramel with crystallized ewe in between. Le Louis XV was a hazelnut biscuit covered with dark chocolate. The divine chocolate cover had an extremely smooth surface. It looked solid, but was actually quite soft with a crunch hazelnut centre. Its texture along with the richness of chocolate made this dessert a gastronomic perfection.
About the Service
At Le Louis XV, service was flawless. For ladies with handbags, your server would bring you a small stool for your handbags so that you can sit comfortably during the meal without placing your handbags on the floor. Whenever you stand up to go to the loo, three servers would rush to your table immediately -- one would help you with your chair; one would lead you the way; and another server would replace your napkin. In additional, they would bring each customer a Christofle gold-plated bowl filled with aromatic infused water just to clean your hands before the dessert. This highest level of service could only be found in Alain Ducasse’s restaurants since he maintains a high staff to customer ratio. Each staff uses his/her ultimate care to ensure perfection to the dining experience of each customer.
The most striking professional and sophisticated service, combined with the 17th century Versailles style dining room, really made you a member of the royal family for that moment. Would it be possible that you travelled back in time and became Louis XV, dining in the Château de Versailles? Wouldn’t 18 varieties of mineral waters, 950 choices of wines, 12 varieties of fresh bread, coffee from 8 nations, and fresh teas and infusions from 14 countries, make you feel like being treated as an almighty king?
As with any dreams, it has to come to an end, no matter how much we wish to stay in this sweet dream forever. On our way out, the reception gave us an elegant bag of cookie as a souvenir for our memorable dining experience at Le Louis XV.
